Rosalia is a festival of flowers celebrated in Ancient Rome. It was often held in May, though many areas continued the practice as a renewal celebration into the early summer months. Though roses are often associated with Aphrodite in Greek mythology, they are also used in adoration of Dionysus, the god of wine! Our Rosalia celebrates the perfume of flowers by starting with direct press Chambourcin from a small, young sustainably farmed vineyard in Cuba, Missouri. During fermentation, the fresh wine is captured in bottle while there is a trace of sugar remaining leading to a softly petillant wine.
